Baked Potato Soup

Ingredients

  • 5 lg baking potatoes
  • 1/2 stick butter
  • 1/2 c flour
  • 7 c milk
  • 1 bunch green onions, chopped
  • 1/2 lb bacon, fried crisp & crumbled
  • 1 1/2 cup cheddar cheese, shredded
  • 1 c sour cream
  • salt & pepper to taste

Preparation

Step 1

Bake potatoes until tender. Cool, peel & chop into small pieces. Melt butter in a large dutch oven & stir in flour to make a roux. Slowly whisk in milk & over medium heat, bring to almost boiling. Add potatoes, green onions & bacon. Stir in cheese & sour cream. Heat through until cheese is melted & soup is warm. Garnish with chopped green onion & crumbled bacon, if desired.
