Abby's Pumkin Muffins GF

Ingredients

  • 1 1/2 cups flour - Better Batter
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp ground ginger
  • 1 egg
  • 2/3 cup packed brown sugar
  • 1/4 cup vegetable oil
  • 1/2 cup canned pumpkin
  • 1/2 cup yogurt
  • 1 cup uncooked oatmeal (GF)
  • 1/2 cup raisens (optional)

Preparation

Step 1

Preheat oven to 350. Grease 12 muffin cups.

In a bowl stir together the flour, baking powder, baking soda, cinnamon, salt, and ginger. Set aside.

Crack the egg into a small bowl. Then in a large bowl, use a fork to stir together the sugar and oil until blended. Stir in the egg, pumpkin and yogurt until blended.

Stir in the flour mix just until blended.

Gently stir in the oatmeal and the raisins. Use a 1/4 cup measure to scoop the batter into the muffin cups.

Bake muffins about 25 minutes.
