White Chocolate Pudding Cookies

This cookie really gets it’s rich flavor from the addition of one box of pudding mix. The sugar is reduced because of this, and I love the way these turn out.

Ingredients

  • 1 cup of softened butter
  • 3/4 cup of granulated sugar
  • 1/4 cup of packed light brown sugar
  • 2 large eggs
  • 2 t. vanilla
  • one 3.4 ounce French Vanilla or Vanilla Pudding mix (instant & not sugar free)
  • 2 1/4 cups flour or gluten free flour blend
  • 1 t. baking soda
  • dash of salt
  • 12 ounce bag of white chocolate chips

Preparation

Step 1

Preheat oven to 350* and combine pudding mix, flour, salt, and baking soda in a mixing bowl and set aside. In another mixing bowl blend butter and sugars until well blended. Add eggs, vanilla, blend again & add to flour mixture, mix well (it will be firm cookie dough) fold in white chocolate chips.

Drop by rounded teaspoonfulls on ungreased cookie sheet, and bake 10-12 minutes until golden around the edges (depending on your oven) allow cookies to cool about 5-10 minutes before moving to waxed paper to complete cooling.
