Ingredients
- Eggs
- Leftover pasta
- Cooked ham, sausage, vegies, etc.
- Parmesan
- Ricotta
- Olive oil
- S&P to taste

Step 1
Beat 2 or 3 eggs with about a cup of ricotta and a handful of grated Parmesan in a large bowl. Add pasta leftovers and toss; you will need at least 1 to 2 servings of leftover pasta--if needed, stretch the leftovers with cooked sausage, cubed ham, roasted vegetables, chopped tomatoes, toasted bread cubes, etc. (This dish is forgiving!) Spoon into an oiled pie plate, then top with a mixture of ricotta and grated Parmesan. Drizzle with olive oil and sprinkle with a chopped leafy herb like basil or flat-leaf parsley. Bake in 350-degree oven until heated through and just golden on top, about 30 minutes. Let cool, about 10 minutes, then cut into wedges.
