New Potatoes w/ Artichoke Hearts & Feta Cheese

Ingredients
- 2 lb. Small red potatoes, quartered
- 2 14 oz. cans small artichoke hearts, drained & quartered lengthwise
- 1/2 cup (2 oz) crumbled feta cheese
- 2 tsp dried thyme (or 2 Tbs fresh) chopped
- 1/2 tsp black pepper (coarse) or to taste
- 1/4 tsp salt (or to taste)
- Cooking spray

Step 1
1. Preheat oven to 425F
2. Coat 9x13 baking pan with cooking spray
3. Cook potatoes until almost done. (Either microwave on high approx. 10-12 minutes and transfer to baking pan or bake in 425F oven approx. 30 minutes. 4. Sprinkle thyme, salt and pepper evenly over the potatoes and then add artichoke hearts stirring carefully to mix but not damage the artichokes.
5. Bake at 425F until the potatoes are done and the mixture is hot (approx. 10-15 minutes).
6. Remove from oven, transfer to a serving dish and toss with the feta cheese.
