Ingredients
- 1/3 cup crumbled reduced fat blue cheese
- 1/4 cup + 1 Tbsp fat free mayo
- 1/4 cup fat free sour cream
- 1 tsp white wine vinegar
- 3/4 cornflakes
- 1 lb chicken tenders
- 2 TBSP buffalo wing sauce
- 5 cups lightly packed romaine
- 1 cup tender watercress sprigs
- 2 large tomatoes
- 2 scallions
Preparation
Step 1
1. Preheat oven to 450. Spray small pan with nonstick spray.
2. To make dressing, whisk together blue cheese, 1/4 cup of mayo, the sour cream and vinegar in small bowl until blended.
3. Spread cornflake crumbs on wax paper
4. Toss together chicken, buffalo sauce, and remaining 1 Tbsp mayo in a bowl. Coat chicken with crumbs. Place chicken on prepared pan. Bake about 5 min per side.
5. Toss together romaine, watercress, tomatoes, and scallions in serving bowl. Place chicken on top of salad.
