Pork Chili Verde

Ingredients

  • 8 fresh Anaheim chilies
  • 1 teas cumin seed
  • 2 T vegtable oil
  • 1 c chopped onion
  • 2 lbs trimmed boneless pork shoulder,
  • cut into 1/2 inch pieces
  • 3 garlic cloves, finely chopped
  • 4 cups water

Preparation

Step 1

Char chilies over gas flame until blackened on all sides.
Enclose in plastic bag 10 minutes. Peel, seed and chop chilies.

Stir cumin seed in heavy skillet over medium heat until fragrant. Ground in spice grinder.

Heat oil in large pot. Add onion; saute 3 minutes. Add pork; cook until jouces evaporate and meat browns, stirring often, about 20 minutes. Add chilies, cumin and garlic. Simmer over medium heat until meat is tender, about 1 hour. Season with salt and pepper.
