Garbage Casserole aka Hamburger Pie
- 1 lb. ground beef
- 1/2 C. chopped onion
- 1 can (2 C.) cut green beans, drained
- 1 10 oz. can condensed tomato soup
- Potato Fluff topper (see below)
In skillet, combine meat, onion, 1/2 t. salt and dash pepper. Brown meat lightly. Drain off any fat. Return to skillet and add drained beans and soup. Pour into 1 1/2 quart casserole dish. Drop Potato Fluff Topper in mounds over meat. If desired, sprinkle potatoes with 2 oz. processed American cheese, shredded (1/2 C.). Bake in moderate oven (350) for 25-30 minutes.
Potato Fluff Topper: Mash 5 medium cooked potatoes while hot; add 1/2 C. warm milk and 1 beaten egg. Season with salt and pepper. Drop in mounds over casserole.
For speed, you can used packaged instant mashed potatoes. Prepare enough for 4 servings, according to package directions, but reserve the milk. Add egg to potatoes. Season with salt and pepper. Slowly add enough reserved milk to make potatoes hold shape.
