Fresh Peach Salsa

I served this salsa over grilled fish seasoned with cajun spices. You could also use it over grilled or roasted chicken breasts. It's so packed full of flavor that even hubby [who doesn't like to mix his fruit with his "main course"] loved it!

Ingredients
- 3 medium peaches, chopped
- 1 red bell pepper, diced
- 2 green onions, sliced
- 1/4 cup minced cilantro
- 1 tablespoon red onion, diced
- 2 garlic cloves, minced
- 1 1/2 tablespoons lime juice
- 1 small jalepeno, seeds removed and diced
- 1/2 teaspoon salt

Directions:
To easily remove skins from peaches, drop them into boiling water for 30 seconds-1 minute. Remove from boiling water and place into a bowl of cool water to stop them from getting too soft. Remove pits and chop. In a large bowl toss peaches with remaining ingredients, except for the salt.
Cover and refrigerate for a couple of hours to let the flavors come together. Sprinkle with salt just before serving.
