Quick Potato Soup
- 1 bag Ore-Ida Steam n Mash potatoes, russet
- 16 oz. chicken stock
- 1/2 to 1 cup milk or half and half
- salt and pepper to taste
Bring chicken stock to a boil while microwaving potatoes. Follow package directions, but leave in only for 5 minutes, not 10. Carefully open bag of potatoes when done, add to boiling stock, and cook about 5 minutes or until potatoes can be mashed with a fork. You can thin the soup with an immersion blender, mash with a whisk, or leave lumpy. Remove from heat and add milk or cream to desired consistency.
For a heartier soup, saute onions and Polish sausage before adding broth to pot, then proceed as above. Or top with cheese, bacon, and onion.
