Ingredients

  • 1 garlic clove peeled
  • 1/2 tsp salt
  • 5 tomatoes, halved, seeded and chopped
  • 1 small red onion
  • 2 TBSP chopped fresh basil
  • 1 TBSP EVOO
  • 1 tsp grated lemon zest
  • 1/4 tsp black pepper

Step 1

1. With side of large knife, mash garlic with salt on cutting board until it forms paste.
2. Stir together garlic paste and all remaining ingredients in medium bowl. Use or refigerate in covered container for 1 day.
