Linguine & Summer Tomato Salad

Ingredients

  • 2 1/2 cups juiced, seeded diced tomatoes
  • 1/2 cup coarsely chopped basil leaves
  • 1/2 cup parmesan shavings, use potato peeler for shavings
  • 1/3 cup diced red onion
  • 2 Tablespoons Plus 1 teaspoon Balsamic vinegar
  • 2 Tablespoons Plus 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 3/4 teaspoon coarse salt
  • 8 ounces linguine or other pasta
  • 1 Tablespoon coarse salt

Preparation

Step 1

Combine tomatoes, basil, Parmesan shavings, onion, vinegar, oil, garlic, & 3/4 teaspoon salt & ground pepper in a shallow bowl - set aside.

Heat large pot of water & 1 tablespoon of salt to boil over high heat -
Cook pasta ala dente.

Drain & Toss with tomato mixture.
