Ingredients
- 2-3 pounds chicken pieces on bone
- 2 cups 3/4 inch diced white potatoes
- 2 tbsp olive oil
- 1/2 cup chopped leaks
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1 tbsp fresh rosemary
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp sage

Preparation
Step 1
In a large pot, add chicken and cover with water. Bring to a boil, cover and simmer on low until chicken falls apart, about 40 minutes. Remove all chicken and let cool. Remove meat from bones and chop into bite-sized pieces.
Increase heat and boil remaining broth uncovered until reduced to about 4 cups. Cool broth and skim fat. Add potatoes and boil until soft, about 20 minutes.
Place olive oil in skillet and sauté remaining ingredients over medium heat until softened, about 10 minutes. Add chicken and vegetables to potatoes and broth.
