Tomato Sauce

When I make the tomato sauce I don't measure anything I just put it in and taste test it until I like it. However I spent some time testing it and put together some measurements that I think will be pretty accurate to the receipe today. The below receipe will serve six to eight people. For a family of four just 1/2 the measurements.

Ingredients

  • Fresh Tomato Sauce:
  • 1/2 cup sweet onion chopped finely
  • 2 or 3 cloves of garlic minced
  • 1/3 to 1/4 cup of olive oil
  • 7 About 7 cups tomatoes ***When in season, the best is fresh san marzano or roma tomatoes chopped, if not in season then use whole tomatoes that you have bottled yourself for the winter***
  • Sea salt, about two teaspoons
  • 6 to 8 leaves of basil chopped
  • 2 tsps of fresh oregano
  • Fresh ground pepper

Preparation

Step 1

Place a small amount of water (enough to cover the bottom of the pot) in a large pot over medium heat. Add sweet onion and cook until clear for about three or four minutes. Add minced garlic and olive oil for a few seconds. Stir in tomatoes and add salt. Turn up heat to high until tomatoes come to a boil. Then turn to a very low simmer for an hour. Add fresh basil, oregano and fresh ground pepper for the last minute. Serve immediately.
Note: If you would like your sauce to be thicker let simmer for a few minutes longer, if sauce is too thick add a 1/4 to 1/2 cup of water part way through simmering the tomatoes and if necessary add more water as needed to thin out sauce. The key to this sauce is that it is light and fresh by using fresh tomatoes not tomatoes from a can.
You can use this sauce for many different things, for example with fish, meatballs, if you are making a pork or beef dish. Also it can be used as an antipasti for a dipping sauce with bread or ravioli,or as pizza sauce for homemade pizza.
