Ingredients

  • 2 Tbsp finely grated parmesan cheese
  • 1 c whole milk
  • 2 1/2 Tbsp butter
  • 3 Tbsp flour
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • Pinch of nutmeg
  • 4 egg yolks
  • 5 egg whites
  • 1 c packed coarsely ground Gruyere cheese

Preparation

Step 1

With rack in lower 1/3 of oven preheat to 400
Butter a 1 1/2 quart souffle dish
Add parmesan and tilt dish coating bottom and sides
Warm milk until steaming
Melt butter over medium heat
Add flour and whisk until mixture begins to foam and loses raw taste-about 3 min
Remove saucepan from heat and let stand 1 min
Pour in warm milk,whisking until smooth
Return to heat and cook,whisking constantly until very thick-2/3 min
Whisk in paprika,salt and nutmeg
Add egg yolks,one at a time,whisking to blend after each addition
Scrape souffle base into large bowl
Cool to luke warm
Beat egg whites untl stiff but not dry
Fold 1/4 of whites into base to lighten
Fold in remaining whites in 2 additions while gradualy sprinkling cheese in
Transfer batter to prepared dish
Place dish in oven and reduce temp to 375
Bake about 40 min-check after 25
