Ingredients
- 2 cups peeled, diced apple
- 2 cups grated carrots or zucchini, or combination
- 3/4 cup sugar
- 2 large eggs lightly beaten
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup raisins
Preparation
Step 1
Preheat oven to 325. Grease muffing tins. In a large bowl, combine the apple, grated vegetables, and sugar. Add the eggs, oil, and vanilla and blend. In another bowl, combine the dry ingredients, then mix into wet ingredients. Add the raisins. Fill the muffin tins two-thirds full. Bake for about 25 minutes.
