CREAM OF WILD MUSHROOM SOUP-Grand Cafe

Ingredients

  • 6 tablespoons butter
  • 2 quarts chicken stock
  • 2 bay leaves
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 bunch chives for garnish

Preparation

Step 1

Melt the butter in a large pot. Add the chopped shallots and cook for one minute on medium heat. Add the wild mushrooms and cook for approximately 3 to 4 minutes. Add the chicken stock, bay leaves, salt and pepper and cook for about 10 minutes, then stir in the cream and cook for 10 more minutes.

After cooking, remove the bay leaves and pour soup into a blender - a portion at a time, if necessary. Blend until smooth. then pour through a very fine strainer to make the soup even smoother.
