Ingredients

  • 2 Tbsp smoked paprika
  • 2 Tbsp chili powder
  • 1 Tbsp brown sugar
  • 1 Tbsp onion powder
  • 1 Tbsp garlic powder
  • 1 1/4 tsp salt
  • 1 tsp pepper
  • 3/4 cup white wine vinegar
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp canola oil
  • 1 tsp cayenne
  • 1 (2lb) first cut brisket, trimmed

Step 1

1. To make rub, mix paprika, chili powder, brown sugar, onion powder, garlic powder, salt, and pepper in cup.
2. To make basting sauce, mix together vinegar, Worcestershire sauce, oil and cayenne in 1 cup glass measure; stir in 1 Tbsp of rub. Transfer 1/2 cup of sauce to cup; resurve. POur remaining sauce into large zip loc; add brisket. REfrigerate, turning bag occassionaly, at least 6 hours.
3. Preheat grill to low
4. pat meat dry with paper towels; discard marinade. Pat reserved rub all over meat; put in large foil pan.
5. Put meat in pan on cooler portion of grill rack. Grill, covered, turning occassionally and basiting with reserved sauce, until instant read thermometer inserted registers 190. about 3-3 1/2 hours.
6. Transfer meat to cutting board. Cover loosely with foil; let stand 10 minutes. Thinly slice across grain into 24 slices and arrange on platter. Pour pan juices over brisket.
