Chocolate Pudding with Meringue

Ingredients

  • Meringue Recipe:
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 eggs, separated
  • 1 stick butter
  • 1 teaspoon vanilla
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla

Preparation

Step 1

Place cocoa, sugar, flour, and salt into large saucepan. Mix thoroughly.

Add 1 cup milk and stir until all dry ingredients are mixed well into milk. Add remaining milk and mix thoroughly.

Heat over medium low heat until mixture begins to thicken, stirring continuously.

Beat egg yolks. Pour small amount of chocolate mixture into egg yolks and mix thoroughly. Add egg-chocolate mixture back into pudding mixture, stirring continuously.

Add butter and vanilla. Continue to heat until pudding is thickened.

Pour into oven-safe bowl.

For the meringue:

Remove eggs from the refrigerator and separate, as they will separate best cold.
Allow egg whites to reach room temperature to allow them to whip to their fullest.
Preheat oven to 350 degrees.
Pour eggs whites into a spotlessly-clean bowl.
Whip the egg whites until they are glossy and smooth, then add the cream of tartar to help the egg whites hold their form.
Slowly add the sugar to the egg whites and then add vanilla.
Spread meringue on top of pre-baked or no-bake dessert, place about 4 inches under the heat and bake for about 10 minutes, until golden.
Serve.
