  • 2 green onions
  • 2 eggs
  • 1 tsp salt
  • Pepper to taste
  • 4 Tbsp oil for frying
  • 4 c cold cooked rice
  • 1/2 Tbsp soy sauce or oyster sauce



Step 1

Chop green onion
Beat eggs with salt and pepper

Heat the wok and add 2 Tbsp oil
When oil is hot add the eggs and cook until lightly scrambled
Remove eggs and clean pan
Add 2 Tbsp oil
Add rice
Stir fry for a few minutes breaking up lumps
Stir in soy sauce
When rice is heated through add eggs
Mix thoroughly and add green onion
