Banana Breakfast Sandwiches

Part French toast, part panini, all delicious, these cinnamon-scented stuffed sandwiches make great snacks, too!

Ingredients
- 2 bananas, halved crosswise, then halved lengthwise
- 4 slices whole wheat or multigrain bread, about 6 ounces
- 2 eggs
- 1/2 cup milk
- 1/2 teaspoon vaniilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of salt
- 1 tablespoon unsalted butter
- 2 tablespoons honey
- 1 teaspoon confectioner's sugar
Preparation
Step 1
1. Arrange banana slices in single layer on two slices of bread. Top with remaining bread.
2. In bowl, combine eggs, milk,vanilla, cinnamon and salt; whisk to blend. Soak each sandwich in egg mixture for a minute or two or until bread is saturated.
3. Melt butter in skillet over medium heat. Place sandwiches in skillet; cook until bottoms are golden, 2-3 minutes. Flip sandwiches. Place pan on sandwiches to press; cook until crisp and golden, 2-3 minutes.
4, Cut sandwiches into quarters. Serve warm with drizzle of honey and sprinkling of confectioner's sugar.
