Crispy Green Beans (PF Chang style)

Ingredients
- Optional dipping sauce:
- 1/2 lb fresh green beans, trimmed
- 1 cup water
- 1 egg
- 1/4 cup milk
- 1-2 cups seasoned bread crumbs
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/5 tsp salt
- 1 cup all-purpose flour
- Vegetable shortening/oil for frying
- 2 tbsp bottled ranch dressing
- 1 tbsp milk
- 1 tsp cider vinegar
- 1/4 tsp wasabi powder, optional
Preparation
Step 1
Add water to a saucepan, bring to a boil. Add the green beans and cook until bright green, about 4 minutes.
Remove with slotted spoon and transfer to a bowl. Cover with cold water until cool enough, remove and set aside.
Rinse off the egg shell to remove any loose dirt or germs. In one mixing bowl, whisk the egg and milk together.
In a separate bowl, mix together the bread crumbs, chili powder, garlic powder, onion powder and salt. Well mixed.
Toss green beans with flour to coat, shaking off the excess. Dip them in the egg mixture and then the bread crumbs.
Heat the shortening in a wok to 375 degrees F (190 degrees C). Fry beans in batches so they are not touching.
Cook until golden brown and crispy, about 2 minutes. Remove with a spider strainer to paper towel, drain oil.
Repeat the process until finish remaining green beans, sprinkle dash of pepper on top. Enjoy with dipping sauce.
Tips:
Mix together the dipping sauce ingredients in a bowl, stir until well blended. Cover and refrigerate before using.
