VEGGIE****Grilled Mozzarella Sandwich with Crispy Prosciutto and Broccoli Rabe

22/02/14 - Great way to use up leftover broccoli rabe roasted with garlic and chillies. I used some low fat Provolone because that's what I had but it needs the "ooze" factor so try mozzarella the next time.

Ingredients
- 2 slices Italian or sourdough bread
- leftover broccoli rabe
- 3 slices prosciutto
- Sliced drained fresh mozzarella cheese or shredded regular mozzarella
- Extra virgin olive oil
Preparation
Step 1
Heat a large nonstick skillet over medium heat and line a plate with paper towels. Add the prosciutto slices to the skillet (you may need to do this in batches) and cook until browned and crisp, about 2 minutes on each side.
Transfer to the paper towels to drain.
Layer the broccoli rabe, prosciutto and cheese on the bottom slice of bread and top with the other slice.
Cook in a bit of olive oil in a nonstick skillet until golden on both sides and cheese is melted.
