Ingredients
- 1 cup long grain rice
- 1 1/2 cups water
- 2 2/3 Tbsp canola oil, divided
- 1 medium white onion, finely chopped
- 2 large mushrooms, finely chopped
- 1 medium green pepper, finely chopped, or 1 cup peas
- 1 carrot, finely chopped
- 1 lb chicken breast
- salt and pepper to taste
Preparation
Step 1
1. Soak rice in water for 5 minutes. Cover and bring to boil. Cook over medium high heat for 5 minutes. Cover and simmer for 15-20 minutes.
2. Meanwhile, heat 1 tsp shortening in skillet and saute one vegetable at a time. Clean skillet after each vegetable. Set each vegetable aside
3. Fry chicken in 1 tsp oil also and season to taste. Set aside.
4. Stir fry cooked rice in 1 Tbsp oil until light brown.
5. Combine all ingredients in large skillet and cook until heated
