- 1 cup white rice
- 2 TB oil
- 2 cups water
- 1/2 tsp salt
- 2 TB soy sauce
- 2 eggs
- 2 scallions (chopped)

Step 1
Heat oil in a 2-quart pan. Sauté rice until golden brown, Add water and salt and bring to a boil. Add soy sauce, Reduce flame, cover pan and simmer for 15-20 minutes, until water has almost evaporated.
In a separate frying pan, scramble two eggs. Add eggs and scallions to rice.
