Baked Cod with Tomato Confit

  • 4 cod fillets
  • 3 tomatoes, seeded and diced
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 Tbsp parsley, minced
  • 2 Tbsp lemon juice
  • 1 Tbsp olive oil
  • Salt and pepper, to taste



Step 1

Preheat oven to 375 degrees. Place fish in a large baking dish. Season wih 1 Tbsp lemon juice, salt and pepper. In a large bowl combine tomatoes, shallot, garlic, parsley, remaining lemon juice and olive oil. Toss to combine. Spread the tomato mixture evenly over the fish. Bake for 20 minutes or until flakey and opaque.
