Rice Pudding

Ingredients

  • 3 eggs
  • 2 tbsp honey
  • 6 tbsp sugar
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • 1 cup milk (1 cup nonfat dry milk and 1 cup water)
  • 3/4 cup evaporated milk (2/3 cups nonfat dry milk and 3/4 cup water)
  • 1 1/2 cups cooked rice
  • 1/2 cup raisins

Preparation

Step 1

Beat eggs. Add honey, sugar, nutmeg, and cinnamon, and mix well. Stir in vanilla, milk, rice, and raisins. Place in a 2-quart casserole dish. Bake at 325 F for 45 minutes. Stir after 25 minutes.
