Ingredients
- Lay large flour tortillas out on counter and layer the following:
- Refried beans
- Salsa
- Green onions, chopped
- Chili pepper (can use can of diced chili peppers)
- 3 c. Monterey Jack
- 3 c. mild Cheddar
- 2 chicken breasts, cooked and shredded
- (Can add olives if you want)

Preparation
Step 1
Roll up and put seam down in a baking pan sprayed with Pam
Mix until looks like gravy:
16 oz sour cream
1 can cream of chicken soup
Thin down with Pinot Grigio dry white wine
Pour over enchilada rolls and sprinkle with cheese
Bake until bubbly at 350 degrees
(I forgot to put cheese inside tortillas once so I sprinkled a little cheese on top of sauce and baked it. It was just as good/or better without so much cheese.)
