Ingredients
- 10 oz mixed salad greens
- 1 pomegrante, seeds removed and separated
- 1 pear, sliced
- 4 oz blue cheese, crumbled
- 1 lemon, juiced
- 1 tsp Dijon mustard
- 3 Tbsp red wine vinegar
- 3 Tbsp extra virgin olive oil
- 1/4 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
Preparation
Step 1
In a large bowl combine salad greens, pomegranate seeds, sliced pear and blue cheese, set aside.
In a separate bowl whisk together lemon juice, mustard, vinegar, olive oil, salt and pepper. Pour vinaigrette over salad; toss to coat. Divide onto 4 plates and serve immediately.
