Ingredients
- 1 cup basmati rice (uncooked)
- 1 tsp salt
- 1 quart water
- 1 cup milk or half-and-half
- 2 tbsp brown sugar
- 1/2 tsp nutmeg
- 2 tsp dried vanilla powder
- 2 tbsp butter
- 1/2 cup chopped almonds
Preparation
Step 1
Place water in a large saucepan. Add the salt and bring the water to a boil. Add the basmati rice, bring back to a boil. Turn down to medium heat and simmer for 10 minutes. Check to see that the rice is tender. Do not overcook.
When rice is tender remove from heat and drain. Place the drained rice back into the pan. Add all the other ingredients in order, stirring the rice well. If you are serving the rice pudding hot, stir in the remaining ingredients with the pan on low. Be careful not to scorch the milk.
If the rice pudding is to be served cold, remove the mixture from the pan and scoop into desired dessert bowls. Chill. This can be served with crumbled dried mint and a dollop of whipped cream.
