Shrimp Scampi with Artichokes

Ingredients

  • 2 Tbs olive oil
  • 4 cloves garlic, minced
  • 2 shallots, thinly sliced (or substitute red onion)
  • 1.25 pound raw shrimp, deveined and peeled (frozen works well)
  • 1 can water-packed artichokes, drained, dried and quartered
  • 1/3 cup white wine, or substitute chicken broth
  • 2 Tbs fresh lemon juice
  • 2 Tbs chopped parsley
  • salt and pepper

Preparation

Step 1

Heat oil over large skillet over medium heat. Add garlic and shallots and cook gently for 2 minutes. Add shrimp, artichokes, wine, and lemon juice and cook for 3-4 minutes, until shrimp are cooked through. Stir in parsley salt, and pepper. Serve with pasta or potatoes.
