Ingredients
- 10 medium-sized (about 1 1/2 pounds) potatoes
- 2 tablespoons butter
- 1 1/2 cups half and half
- 1 1/2 teaspoons salt
- 1/2 cup finely chopped fresh herbs, such as dill, parsley, or chives.
Preparation
Step 1
Pare and dice the potates into 1/2-inch cubes. Melt the butter in a heavy skillet. Add the potato cubes and saute them until they are coated with butter and begin to look translucent.
Pour the half and half over the potatoes. Add the salt. With a spatula, blend the ingredients well. Cover and cook over low heat until the potatoes are soft, about 20 minutes. Sprinkle with the herbs just before serving.
