Bean Dip

Ingredients

  • 1- 15 oz can shoe peg corn - drained
  • 1- 15 oz can blackeyed peas - drained
  • 2 avacados
  • 2/3 cup cilantro - chopped (or 1/2 cilantro 1/2 parsley)
  • 2/3 cup green onions - chopped
  • 1 cup tomatoes - diced
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 5-8 cloves garlic - minced
  • 3/4 tsp salt
  • 1/8 tsp cumin

Preparation

Step 1

Mix all ingredients together.
Cover and regrigerate.
