Ingredients
- 1- 15 oz can shoe peg corn - drained
- 1- 15 oz can blackeyed peas - drained
- 2 avacados
- 2/3 cup cilantro - chopped (or 1/2 cilantro 1/2 parsley)
- 2/3 cup green onions - chopped
- 1 cup tomatoes - diced
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 5-8 cloves garlic - minced
- 3/4 tsp salt
- 1/8 tsp cumin
Preparation
Step 1
Mix all ingredients together.
Cover and regrigerate.
