Ingredients
- 1 pound baking potatoes, peeled and cut into 2-inch pieces
- 1 pound of prepared vegetables (carrots, cauliflower, celery root, parnsips, rutabagas or sweet potatoes)
- 2 tbsp butter
- 1/4 cup milk
- 3/4 tsp salt
- 1/8 tsp pepper
Preparation
Step 1
Cook baking potatoes with 1 pound of prepared vegetables (listed below)in boiling water in a saucepan until tender, 20 minutes; drain. Return to pan with butter, milk, salt and black pepper, then mash with a potato masher. Serves 4.
Carrots: Peeled and cut into 1-inch pieces
Cauliflower: Cut into 2-inch pieces
Celery root: Peeled and cut into 1-inch pieces
Parsnips: Peeled and cut into 1-inch pieces
Rutabagas: Peeled and cut into 1/2-inch pieces
Sweet potatoes...peeled and cut into 1-inch pieces
