- 1 cup flour
- 1/4 cup sugar
- 1/4 tsp unsweetened cocoa
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup skim milk
- 1/4 cup applesauce
- 1 tsp vanilla
- 1/4 cup brown sugar
- 1/4 cup unsweetened cocoa
- 1 3/4 cups hot water
- Lowfat frozen yogurt
- Whole raspberries
- Raspberry Sauce (see recipe)
- Raspberry Sauce:
- 1 (12 ounce package) thawed whole frozen raspberries
- 3 tbsp sugar
- 2 1/2 tbsp orange liqueur or juice
Preparation
Step 1
Preheat oven to 350 F. Spray an 8-inch square baking pan with cooking spray.
Combine flour, sugar, 1/4 cup cocoa, baking powder and salt in a large mixing bowl. Add milk, applesauce and vanilla; stir to blend. Scrape into prepared pan.
Combine brown sugar, 1/4 cup cocoa and hot water; stir to blend. Pour over batter in baking pan. Bake for 40 minutes at 350 F. Let cool in pan.
To serve, cut into 16 (2-inch square) pieces. Arrange each piece on a dessert plate and drizzle with some of the chocolate sauce that has formed on the bottom of the pan. If desired, top with lowfat frozen yogurt, Raspberry Sauce and/or whole raspberries.
Raspberry Sauce: Puree thawed whole frozen raspberries in blender, food mill or food processor; strain through a fine sieve over a wide bowl to remove all seeds. Heat and stir puree with 3 tbsp sugar to blend and dissolve sugar. Remove from heat and stir in 2 1/2 tbsp orange liqueur or juice.
