Ingredients

  • 1 cup of butter
  • 1/2 cup of sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 2 1/3 cups of all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of raspberry jam
  • Glaze
  • 1 cup confectioner's sugar
  • 2 tablespoons of evaporated milk
  • 1/2 teaspoon vanilla extract

Preparation

Step 1

Combine all cookie ingredients except the jam. Divide the dough into 4 equal parts. Form each into logs measuring 10 x 2 x1. Place on ungreased cookie sheets. Form a indentation with your thumb down the center of each log.

I put two logs on a cookie sheet. Bake for 10 minutes. Put jam down the center. Put back in the oven for 10 minutes. Allow logs to cool 5 minutes and then drizzle with the glaze.

Slice carefully like a loaf of bread. I have made these with a white chocolate drizzle. Just melt white chocolate and use the same method. Enjoy. Makes 5 dozen. I got this recipe from the Taste of Home Magazine.
