Asparagus with Saffron Dressing

Ingredients

  • DRESSING:
  • 3 pounds fresh asparagus, washed and trimmed
  • 1/3 cup water
  • 1/4 teaspoon saffron powder
  • 2 large garlic cloves, minced
  • 2 egg yolks
  • 1 1/4 cups olive oil
  • salt
  • black pepper

Preparation

Step 1

Wash and trim the asparagus. Plunge into boiling, salted water for 1 to 2 minutes, or just until the asparagus are bright green. Drain well and plunge into ice water.

To prepare the dressing, combine the water and saffron powder. Mix in the garlic and egg yolks. whisk in the olive oil until well-blended. Season with salt and pepper.

Pour the dressing over the asparagus, cover and chill until ready to serve.
