Ingredients

  • SANTA FE CHICKEN
  • 1 large onion, chopped
  • 1 T. butter
  • 1 1/4 c. broth (1 whole can)
  • 1 c. salsa
  • 1 c. uncooked long grain rice
  • 1/8 t. garlic (opt)
  • 4 cooked, boneless chicken breasts, cut into bite size pieces
  • 3/4 c. shredded colby cheese (can use cheddar)
  • Parsley to garnish

Preparation

Step 1

Saute onion in butter until clear.
Add broth and salsa and bring to a boil.
Add rice and chicken and cover. Simmer 10 minutes then stir.
Cook 10-15 minutes longer then remove from heat. Sprinkle with cheese, cover and let cheese melt 5 minutes. Garnish with parsley.
