Asian Chicken Noodles With Vegetables
- cooking spray
- 3/4 lb boneless skinless chicken breast, cut into strips
- 1/4 teaspoon ground ginger
- salt & pepper
- 2 cups water
- 1 (3 ounce) package chicken-flavored ramen noodles
- 0.5 (16 ounce) package frozen mixed vegetables (broccoli, carrots, & water chestnuts)
- 1/4 cup stir-fry sauce
Note: Reserve seasoning packet from the ramen noodles.
Spray a skillet with cooking spray & turn on medium-high heat. Sprinkle the chicken strips with ground ginger, salt & pepper then cook until no longer pink, around 8 minutes.
Meanwhile, bring the water to boil in a large pot. Add the vegetables & noodles then cook for 3 minutes.
Drain & place back on the heat. Stir in the chicken, stir-fry sauce, & seasoning packet, heat until warm.
