Ingredients

  • 12 potatoes (large)
  • 3 eggs
  • 1 large onion (grated)
  • 2/3 c flour
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/4-1/2 lb. butter (1-2 sticks)

Preparation

Step 1

Peel potatoes and put n ice cold water to prevent browning. In large bowl, beat eggs add the onion and gradually beat in the flour, salt, pepper, and garlic. Pat the potatoes dry and grate each one. Put in cheesecloth to squeeze out excess water. Add the potatoes to egg mixture and mix well.

Preheat oven to 250 degrees. Heat skillet and add 1/2 stick butter. When butter is bubbly, take 1/4 c potato mixture and add to skillet. Press down in shape of pancake. Cover and cook for 5-7 minutes. Flip and when brown and crispy remove to baking sheet and put in oven to keep warm. Keep adding butter as needed to cook potatoes.

Serve with applesauce
