  • 1 Box Super moist lemon or yellow cake mix
  • 1/4 cup butter, softened
  • 3 eggs
  • 1 pkg (8 oz.) cream cheese
  • 1 cup powdered sugar
  • 2 tsp. grated lemon peel
  • 2 tbsp. lemon juice

Step 1

Preheat oven to 350.

In a large bowl, beat cake mix, butter, and one of the eggs on low speed until crumbly. Press into the bottom of a 13x9" baking pan.

In a medium bowl, beat cream cheese on medium speed until smooth. Gradually beat in powdered sugar on low speed. Stir in lemon peel and juice until smooth. Reserve 1/2 cup of this mixture and refrigerate. Beat the remaining two eggs into the cream cheese mixture on medium speed until blended. Spread over the cake mixture.
Bake 23-28 minutes or until set. Cool completely about one hour. Spread reserved cream cheese mixture over the top. Refrigerate 3 hours or until firm For bars, cut into 8 rows by 6 rows. Store covered in the refrigerator.
