Ingredients
- 1 1/2 cups AP flour
- 1 cup whole-wheat flour
- 3/4 cup chopped crystallized ginger
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1 1/4 cups sugar, divided
- 1/2 cup applesauce
- 1/4 cup veg oil
- 1 tsp grated lemon rind
- 1 tbsp lemon juice
- 1/4 tsp vanilla extract

Preparation
Step 1
Combine flours with next 5 ingredients (through ground ginger). Stir well with a whisk.
Combine 1 cup sugar, applesauce and the next 4 ingredients.(Through vanilla)
Make a well in the center of the flour mixture and add applesauce mixture. Stir until moist and chill dough for at least 1 hour.
Preheat oven to 350 degrees.
Lightly flour hands. Roll dough into 24 balls. Roll balls in remaining sugar and place 2 inches apart on a cookie sheet coated with cooking spray.
Cook 15 min or until lightly browned.
Cool 1 min on pan and then or racks until completely cooled.
