chicken shrimp and sausage jambalaya

Ingredients

  • 1 lb boneless skinless chicken thigh strips
  • 2 tsp creole sauce
  • 2 tbs olive oil
  • 6 oz smoked sausage
  • 1 large onion chopped
  • 1 small red pepper chopped
  • 1 small yellow pepper chopped
  • 1 small green pepper chopped
  • 1 tbs fresh thyme
  • 1/2-1 tsp cayenne pepper
  • 1 cup long grain rice
  • 3 cups chicken stock
  • 1 can fired roasted tomatoes
  • 3/4 lb large shrimp

Preparation

Step 1

Heat oil and sprinkle chicken with creole seasoning. Saute chicken and sausage until brown.

Add onions, peppers, thyme and cayenne . Cook stirring constantly until onions are translucent ( about 4 min)

Stir in rice, broth and tomatoes and bring to boil. Simmer 10 minutes. Check seasoning and add tabascco if necessary.

Cook an additional 10 minutes then add shripm ( I also added frozen peas). Bring to boil and continue to simmer 10 minutes.
