Slow Cooker Black Bean Soup

Ingredients
- 5 carrots, chopped
- 5 celery stalks, chopped
- 1 onion, chopped
- 3 large cloves garlic, chopped
- 1 red pepper, chopped
- 1 1 pound package dried black beans, rinsed
- 3 chiptole chilis in adobe, chopped
- 1 1/2 tablespoons cumin
- 1 1/2 teaspoons salt
- 1 32 ounce container vegetable broth
- 3 cups water

Preparation
Step 1
Place all ingredients in slow cooker
Cook on low for 8 hours.
Serve with chopped cilantro, chopped green onion, chopped avocado, sour cream and tortillas.
