Ingredients

  • 4 servings
  • flour mixed with salt and pepper
  • 1 TBS olive oil
  • 6 to 8 chicken thighs or other chicken pieces
  • 6 slices cooked and crumbled bacon
  • 8 oz sliced mushrooms
  • 1 cup baby carrots
  • 1 chopped yellow onion or pearl onions
  • 3 cloves chopped or minced garlic
  • 1/2 t black pepper
  • 1/2 t kosher salt
  • 1/2 cup chicken broth
  • 1 1/2-2 cups red wine
  • 2 large fresh thyme sprigs or 4 tsp dried

Preparation

Step 1

Cook your bacon. Set aside
melt butter and olive oil in crockpot or on stove if you don't have multi cook crockpot
shake chicken pieces in flour mixture. Add to oil and butter mixture to brown. Add in onions, garlic, thyme, mushrooms,carrots and cooked bacon.
Add in chicken broth and wine .

Cover and cook on low for 8 hours.


Serve with mashed potatoes or your favorite pasta.

Note: You can add cut up potatoes to crock pot and when ready to serve, remove them and mash up.
