Ingredients
- 1/2 c all purpose flour
- 1/2 tsp baking soda
- 1 1/4 tsp baking powder
- 1 tsp salt
- 2 tbsp sugar
- 1 1/4 c cornmeal
- 1 egg, beaten
- 1 1/4 c buttermilk
- 1/4 c oil
Preparation
Step 1
Heat oven 425 degrees. Spray muffin pan.
Sift together dry ingredients, except corn meal. Add corn meal. Combine egg, buttermilk and oil, add dry ingredients, stir until well mixed. Fill muffin pans 2/3 full.
Bake 12 - 15 minutes. Yield 18 muffins.
