Spicy Minced Meat Rolls (Cevapcici)
John Cristescu's recipe from BBQ
- 1 1/2 pounds ground beef
- 1/2 pound gound lamb
- 1 tsp freshly ground black pepper
- 3 Tbs chopped parsley
- 1 Tbs salt (Or Vegeta, then salt to taste)
- 1 tps minced garlis or garlis powder
Put all ingredients into a large mixing bowl and kneed well to bind the meats and spices together
Refrigerate for at least 2 hours (Over night in refridgerator preffered)
Remove from Refridgerator and kneed well again.
Shape into finger length shapes and cook on a grill or in broiler over a moderate tempeature so that they stay juicy. Turn once, do not pierce.
If using a BBQ, start them on the upper rack over medium heat. move to grill once they start to turn brown to finish cooking / browning. Keep turnig to avoid burning or drying out.
Serve on Fry Bread or Pita
Meat mixture can be prepared and frozen for latewr use.
