Ingredients
- 1 3/4 cups sugar
- 3 eggs
- 1 cup vegetable oil
- 1 3/4 cups sifted flour
- 2 tsp cinnamon
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 2 1/2 cups grated carrots
- 2/3 cups chopped nuts
- 1/3 cups raisins

Preparation
Step 1
Preheat oven to 350 degrees. Grease and flour Springform Pan; in large mixing bowl, beat sugar and eggs until thickened; add oil and beat well.
Sift flour, cinnamon, baking soda and baking powder together; add to egg mixture and mix well.
Fold in carrots, nuts and raisins. Pour into prepared pan and bake for 50-60 minutes or til toothpick comes out clean. Cool 10 minutes in pan, remove springform, invert on rack and remove bottom to cool.
