cube steaks , cut in 2x½ strips
large onion, thinly sliced
clove garlic, minced
medium potatoes, peeled & cut into eighths
can chopped Tomatoes, 28 oz
can tomato sauce, 8 oz.
package frozen peas, 10 oz.
medium green pepper, cut int ¼" strips
Dredge meat in mixture of flour, salt & pepper. Melt shortening in heavy skillet and brown meat. Add onion, garlic, potatoes, tomatoes and tomato sauce. Heat to boil, lower heat and simmer stirring occasionally 30 min. or until meat and vegetables are almost tender. Add peas and green pepper. Heat to boil, lower heat and simmer 5 minutes longer, until peas are tender and pepper is still crisp.
