Ingredients
- Crust:
- 2 cups graham cracker crumbss
- 1 1/2 cups finely chopped walnuts
- 1 cup shredded coconut
- 1/2 cup confectioners' sugar
- 1/4 cup unsweetened cocoa powder
- 3/4 cup butter or margarine, melted
- 1 large egg, beaten
- 1 tsp vanilla extract
- Creme de Menthe Layer:
- 2 cups confectioners' sugar
- 1/2 cup butter (no substitutes), softened
- 3 tbsp Creme de Menthe liqueur
- 1/2 tsp vanilla extract
- Chocolate Topping:
- 1 (12 ounce) package semisweet chocolate chips, melted
- 1/2 cup butter (no substitutes), melted
- Red candy hearts, optional
Preparation
Step 1
Make Crust: Line a 13-by-9-inch baking pan with foil extending edges over sides. Stir together all the ingredients in a large bowl until well combined. Press into prepared pan. Chill until firm, 1 hour.
Make Creme de Menthe Layer: Meanwhile, beat together all ingredients in a large mixer bowl on medium speed until smooth. Spread evenly over crust. Chill 30 minutes or until firm.
Make Chocolate Topping: Combine chocolate chips and butter in a small bowl. Spread evenly over Creme de Menthe Layer. Refrigerate until chocolate sets, 1 hour. Lift out of pan. Peel off foil and cut into 1-inch squares. Decorate as desired.
